This aromatic rice from Louisiana is a hybrid with a rich, nutty flavor and a cooked fragrance akin to popcorn.
To prepare: Rinse 1 cup rice; cover with 4 cups of water. Bring to a boil; reduce heat; simmer, covered, 45-50 minutes. Drain off excess water. The rice will burstwhen tender.
Six ounces dry (scant 1 cup) yields 6 1/2-cup servings.
