Recipe: Wash 2 cups beans. Cover with water. Add 2 1/2 tsp. salt. Soak overnight. Add enough water to make 2 qts. liquid. Add ham or ham bone, or 2 Tbsp bacon bits. Add 1 whole garlic clove; 1 large red pepper pod (optional); & 1 large onion, cut lengthwise. Cook slowly for at least 1 hour. Add 1 large can of tomatoes, cut into small pieces; the juice of 1 lemon; salt and pepper to taste. Serves 8.
