Eston Lentils are the seed of a small shrub and are dried after harvesting. The nature of the legume is such that when cooked they loose their shape and are therefore an excellent choice for thickening soup. Lentils are often cooked with curry spices and served with rice in many south Asian countries.

Green Eston Lentils are pale green, slightly speckled, lens-shaped legumes that are known for their easy preparation, earthy flavor and high protein content.
