Ingredients: Ground Pasilla Chili Pepper, Ground New Mexico Chili Pepper, Spanish Paprika, Ground Mustard, Brown Sugar (Sugar, Cane Syrups), Caramel may be added for color), Cocoa, Ground Ancho Chili Pepper, Ground Cumin, Basil, Mexican Oregano, Black Pepper, Cayenne Pepper, Granulated Garlic.
Snow Country Chili Recipe:
2 lbs. ground beef
1 lb. ground pork,
1 lb. ground Italian sausage,
12 oz. chorizo sausage,
1 16oz can tomatoes,
2 amber beers or 750ml red zinfandel,
1 ea red, orange & green bell pepper,
1 package (4 oz) ,
2 onions, chopped,
1/4 cup extra virgin olive oil,
2 Cups Kidney Beans or 1 large can,
2 Cups Anasazi Beans or 1 large can,
2 Cups Pinto Beans or 1 large can OR as many beans you want!
(Choices for dry beans: Soak overnight or Quick Soak by Bringing the beans to a boil for one minute, cover, and let sit for one hour.)
Dice peppers and onion. Mix all the 4.75 lbs of meat in a large kettle and Brown stirring to mix well cutting sausages to small pieces (or remove from wrap before cooking). Add Snow Country Spice Mix, peppers and onions. Sauté for 3-5 mins and add beer (or wine), beans and tomatoes. Cook med heat for 30 minutes, reduce to low; cook covered 1 hour, stirring from time to time. Taste, adjust seasoning, and cook on low for another hour, stirring occasionally. Sample again and add salt if necessary.
