Whey is a natural food powder resulting from the spray drying of liquid whey. For bread baking, a teaspoon per cup of flour will improve the color, taste and texture of most yeast bread. Whey can be used in place of milk powder in most recipes.
For many years nutritionists have SUGGESTED whey since it is rich in milk protein and in milk lactose which stimulates the rapid growth of the native intestinal acidophilius.
