Description

Cassia is one of the oldest of spices. It is related to cinnamon, they are used interchangeably in many countries. The aroma is more intense yet less fragrant than cinnamon; the flavor is slightly sweet, with a bitter, astringent edge.

Use in pickling; place in an infuser to flavor couscous, barley, split peas or lentils.
