Toothpaste often contains xanthan gum, where it serves as a binder to keep the product uniform. Xanthan gum is also used in gluten-free baking. Since the gluten found in wheat must be omitted, xanthan gum is used to give the dough or batter a &#8220;stickiness&#8221; that would otherwise be achieved with the gluten. Xanthan gum also helps thicken commercial egg substitutes made from egg whites to replace the fat and emulsifiers found in yolks. Many pie recipes call for instant tapioca instead of tapioca starch, but instant tapioca doesn&#8217;t dissolve completely and leaves small gelatinous blobs suspended in the liquid. This isn&#8217;t a problem in a two-crust pies, but the blobs are more noticeable in single-crust pies.</p>
<p>Tapioca starch is finely ground so that it dissolves completely, eliminating the gelatinous blob problem. The starch is also sometimes used to thicken soups, stews, and sauces, but the glossy finish looks a bit unnatural in these kinds of dishes. It works quickly, though, so it&#8217;s a good choice if you want to correct a sauce just before serving it. Some recipes for baked goods also call for tapioca flour because it imparts a chewier texture.</p>
<h2><strong>Where does Tapioca Flour Come From?</strong></h2>
<p class="selectionShareable">The cassava root. It is washed, cut up, then finely shredded. The resulting pulp is washed, spun, and washed until the mixture is primarily pure starch and water. Then, that starch is dried.</p>

<p class="selectionShareable">Tapioca flour is a wonderful thickener that is superior to arrowroot starch and potato starch. It provides a crispy crust and chewy texture in gluten free baked goods. It also serves as an effective thickening agent for other recipes such as homemade pudding, cookie dough, sauces and gravies. Some people choose tapioca because they cannot eat corn or potatoes for health reasons and tapioca flour is a wonderful alternative.</p>
<h2><strong>Tips for Using Tapioca Flour to Replace Other Ingredients: </strong></h2>
<ul>
<li><strong>Tapioca Flour for Cornstarch in Baking</strong>: Replace 1 tablespoon cornstarch with 2 tablespoons tapioca flour.</li>
<li><strong>Tapioca Flour for All Purpose Flour in Thickening</strong>: Replace 1 for 1.</li>
<li><strong>Tapioca Flour for Instant Tapioca Pearls</strong>: For every 1 tablespoon of quick-cooking tapioca pearls use 1 1/2 tablespoons of tapioca flour. Mix the tapioca flour with any dry sugar in an uncooked pie filling or make a slurry with a small amount of the liquid before heating in a pre-cooked pie filling, then slowly add the slurry back into the pie filling and continue to cook the filling at a simmer for 5-10 minutes or until the cloudiness from the tapioca flour has turned transparent.</li>

It&#8217;s ground into fine granules that dissolve easily when added to pie filling or crockpot gravies, and is prized for its thickening abilities.</p>
<p>Instant tapioca is also called <b>quick tapioca</b>, quick cooking tapioca, tapioca granules, and instant pearl tapioca are great for pies. Instant tapioca is granulated and this is the stuff used for thickening pie fillings, stews, gravies, and soups. In the west, cassava is best known in the form of tapioca. Tapioca flour/starch, instant tapioca granules and tapioca pearls are made from starch produced by processing grated fresh cassava.  Cassava and tapioca are quickly becoming popular as alternatives to grain and gluten-free chips, crackers, tortillas, crepes, pancakes, wraps and flour.</p>
<p>Other names for 60 Second Tapioca are &#8220;quick cooking tapioca,&#8221; &#8220;tapioca granules,&#8221; and &#8220;instant pearl tapioca.&#8221; Instant tapioca is granulated and as mentioned it&#8217;s used for thickening pie fillings, stews, gravies, and soups. To be sure to eliminate the chance of &#8220;blobs&#8221; if the granules don&#8217;t dissolve completely, grinding it further in a food processor, blender, spice grinder, coffee mill, or mortar and pestle will assist to make it smooth. This form takes a little time to “bloom” and do its magic, so be sure to add it to your pie filling at least an hour before baking.</p>
<p><strong>Basic Pudding Recipe:</strong> 1/3 c. sugar, 3 Tbsp Tapioca, 2 3/4 c. milk, 1 well-beaten egg, 1 tsp vanilla. Mix sugar, tapioca, milk and egg; let stand 5 minutes. Stirring constantly, cook on medium heat till mixture comes to full boil. Remove from heat. Stir in vanilla. Cool 20 minutes; stir. Serves 6.</p>

<p>3 lb. peaches, 6 cups peeled, pitted and sliced 1/4 inch thick</p>
<p>1/2 C. packed brown sugar</p>
<p>1/4 to 1/2 C. granulated sugar</p>
