Pumpkin Spice Coconut Granola with Raw Wheat Germ

Ingredients:

  • 1/2 cup Coconut Oil
  • 1/4 cup Niblack Foods Organic Peanut Butter Powder
  • 1/3 cup Pure Maple Syrup, Molasses, or Honey
  • 1/4 tsp Spriana Vanilla Bean Sea Salt
  • 1 tsp Niblack Foods Pumpkin Pie Spice
  • 4 cups Rolled Oats
  • 1/2 cup Niblack Foods Raw Wheat Germ
  • 1/2 cup Niblack Foods Super Seed Blend
  • 1 cup Unsweetened Shredded Coconut
  • 1/2 cup Sliced Raw Almonds or Raw Cashews
  • 1/2 cup Raw Pumpkin Seeds
  • 1/4 cup Unsalted Sunflower Seeds
  • 1 cup Dried Cranberries, or Raisins
  • 1/2 cup water

Instructions:

  • Preheat the oven to 250 degrees. Add the coconut oil, peanut butter powder, maple syrup, sea salt, and pumpkin spice to a medium saucepan, and simmer for 3-4 minutes, stirring constantly.
  • Mix the rest of the ingredients together in a separate bowl, reserving the water for later.
  • Add the hot liquid to the dry mixture and mix well.
  • You want this moist, so add water till it forms into a small ball.
  • Spread granola on two baking sheets. Put in the oven and bake for 50 minutes.
  • Halfway through, stir the granola gently. Cool on the sheets.
  • Great with yogurt, milk, on deserts or as a healthy snack!!!
