Ingredients:

  • 3 cups Niblack Whole Spelt Flour
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons active dry yeast
  • 1 tablespoon honey or maple syrup
  • 1 ¼ cups warm water (110°F)
  • 1 tablespoon olive oil

Instructions:

  1. Activate the yeast – In a small bowl, mix warm water, yeast, and honey. Let sit for 5-10 minutes until foamy.
  2. Mix the dough – In a large bowl, combine spelt flour and salt. Add the yeast mixture and olive oil, stirring until a dough forms.
  3. Knead – Transfer to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic. Spelt dough is more delicate than wheat, so avoid over-kneading.
