Recipe: Butternut Squash Pasta Sauce
This deliciously colorful butternut squash pasta sauce recipe comes to us from customer and food blogger @eagereats.
Ingredients:
- 1 large red onion
- 1 tsp minced garlic
- 1 Tbsp of extra virgin olive oil
- 1/2 tsp Niblack Poultry Seasoning (salt-free)
- 1/4 tsp Niblack Ground Chili Chipotle
- 1-1 1/2 Tbsp fresh thyme (or substitute Niblack dry thyme)
- 1 1/2 cups butternut squash puree (puree cooked butternut squash — 1 super large or a couple smaller)
- 1 cup Savory Choice vegetable broth (or chicken, your personal choice)
- 1 cup coconut milk (recommend unsweetened)
- 1-2 strips of cooked turkey bacon
Directions:
- Put the olive oil in a small or medium saucepan on medium heat
- Add the onion and saute for about 5 minutes until the onions are soft
- Add the garlic to the pan and cook for 2-5 more minutes. Make sure it’s mixed in with the onion
- Stir in the poultry seasoning, chili chipotle and thyme. Then add the squash puree, broth and milk.
- Thoroughly mix everything together. Keep on medium heat for about 2 minutes and then turn heat down to low
- Let simmer for 10-20 more minutes, or until it’s at your desired thickness
- While the sauce is thickening, cook a strip or two of turkey bacon (if you haven’t already) and cook your pasta of choice (pictured here are medium-sized shells)
- When the sauce is done, pour over drained pasta while everything is still hot. Crumble up the turkey bacon and sprinkle it atop the pasta along with some fresh (or dried) thyme
