Jerky Preparation Instructions:

  1. Trim fat from meat and partially freeze for easier slicing.
  2. Cut strips along the grain, approximately ½-inch thick and 1½ inches wide.
  3. For 1 lb of meat, rub 5 teaspoons of seasoning on all surfaces.
  4. Place seasoned strips in a plastic bag and cure in the refrigerator for 1 hour.
  5. Rinse strips with cold water and pat dry thoroughly.
  6. Arrange strips on greased racks in a shallow pan, ensuring meat edges do not overlap.
  7. Dry in the oven at 120-150°F with the door slightly open for 24 hours.
  8. Let cool completely before storing in an airtight container in a cool, dry place or freeze for extended freshness.
  9. For 4 lbs of meat, use 3.5 ounces of seasoning mix.
