It&#8217;s ground into fine granules that dissolve easily when added to pie filling or crockpot gravies, and is prized for its thickening abilities.</p>
<p>Instant tapioca is also called <b>quick tapioca</b>, quick cooking tapioca, tapioca granules, and instant pearl tapioca are great for pies. Instant tapioca is granulated and this is the stuff used for thickening pie fillings, stews, gravies, and soups. In the west, cassava is best known in the form of tapioca. Tapioca flour/starch, instant tapioca granules and tapioca pearls are made from starch produced by processing grated fresh cassava.  Cassava and tapioca are quickly becoming popular as alternatives to grain and gluten-free chips, crackers, tortillas, crepes, pancakes, wraps and flour.</p>
<p>Other names for 60 Second Tapioca are &#8220;quick cooking tapioca,&#8221; &#8220;tapioca granules,&#8221; and &#8220;instant pearl tapioca.&#8221; Instant tapioca is granulated and as mentioned it&#8217;s used for thickening pie fillings, stews, gravies, and soups. To be sure to eliminate the chance of &#8220;blobs&#8221; if the granules don&#8217;t dissolve completely, grinding it further in a food processor, blender, spice grinder, coffee mill, or mortar and pestle will assist to make it smooth. This form takes a little time to “bloom” and do its magic, so be sure to add it to your pie filling at least an hour before baking.</p>
<p><strong>Basic Pudding Recipe:</strong> 1/3 c. sugar, 3 Tbsp Tapioca, 2 3/4 c. milk, 1 well-beaten egg, 1 tsp vanilla. Mix sugar, tapioca, milk and egg; let stand 5 minutes. Stirring constantly, cook on medium heat till mixture comes to full boil. Remove from heat. Stir in vanilla. Cool 20 minutes; stir. Serves 6.</p>

<p>3 lb. peaches, 6 cups peeled, pitted and sliced 1/4 inch thick</p>
<p>1/2 C. packed brown sugar</p>
<p>1/4 to 1/2 C. granulated sugar</p>

<p>3 to 4 T. instant tapioca</p>

<p>When a recipe calls for fresh egg whites with stiff peaks, this powder can replace raw egg whites. While it is true that raw egg whites are the &#8220;gold standard&#8221; for meringue, many people don&#8217;t like using raw eggs OR just want something easier. This is that &#8220;let&#8217;s do this easier&#8221; product.</p>
<p>As mentioned, meringue powder is very useful for royal icing, piped meringue cookies, the perfect topping for lemon meringue pie, but also interesting is that using just a small amount of meringue powder will also stabilize your regular frostings/icings so they hold their piped designs without bleeding. The color of meringue powder and it&#8217;s frostings/icings will be naturally white, but of course, you can <a href="https://niblackfoods.com/decorating/">add food coloring</a> to match the icing to the color of your occasion.</p>

<li><strong>To substitute one egg white: </strong>Combine 2 tablespoons of meringue powder with 2 tablespoons of water.</li>
<li><strong>For royal icing:</strong> Combine 4 cups powdered sugar, 3 tablespoons meringue powder, and 9 tablespoons warm water. Whip using the whisk attachment on medium-low speed until a glue-like consistency form. Whip on medium-high speed for an additional 1 to 2 minutes to make stiff peaks for a thicker icing to construct a gingerbread house.</li>
<li><strong>For stabilizing frostings: </strong>Depending on the frosting type, the amounts and how it’s added vary. A small amount (about 1 tablespoon) is added dry once the butter and sugar have been creamed together for buttercream frosting. For whipped cream, about 1 tablespoon can stabilize 1 cup; add it after the cream starts to foam.</li>
<li><strong>Decorating: </strong>Use food coloring or colored gels when making meringue-based icing or frostings. Use piping bags, tips, or squeeze bottles for creating intricate designs.</li>

<div class="review-user-desc-content">I have used this many times for icings for special Christmas cookies. I put a little almond extract in the mix and a little red food coloring gel to make icing for one of my (secret) specialty cookies. Icing has a nice texture. Have not yet tried it for cake string designs but am going to soon.</div>

										<content:encoded><![CDATA[<p>Agar powder is a natural gelatin that is plant based, from marine red algae. Unlike &#8220;traditional&#8221; gelatin which is made from boiling down animal products, this is entirely plant based and vegan. It is an oustanding alternative to traditional gelatin and is used for vegan desserts, cheeses, jellies, puddings custards, and gummy candy (i.e., gummy bears). On the savory end of the spectrum, Agar Powder (Agar-Agar) is excellent in soups and gravies as a thickening agent for starch-free soup/gravy base thickening.</p>

<p>When substituting for gelatin in a recipe, agar powder can be used in a 1:1 ratio. Before Agar powder can be added to a recipe, it needs to be dissolved in water and then boiled. This powder cannot be simply dissolved in a liquid or added directly to your dish. Dissolve the Agar powder in a liquid in a saucepan over medium-high heat, bring it to a boil, and then simmer until the liquid is slightly thickened, usually it will take about five to seven minutes. Once the Agar powder is dissolved add it to your recipe. The dish you&#8217;re creating should take approximately one hour to set, and it will do so at room temperature. (Note that if the dish you&#8217;re creating has other ingredients requiring refrigeration to do so, but Agar itself does not need refrigeration to set). You may need to use more Agar powder to set dishes that are high in acidity levels, so consider that when your dish contains acidic ingredients like citrus fruits, strawberries, etc.</p>
<p>Agar powder is colorless, odorless and essentially tasteless also making it very versatile for cooking. Agar powder allows you to tweak recipes to suit your diet by allowing you to thicken food and/or &#8220;gelatanize&#8221; your dishes without incorporating animal ingredients, sugar, or starch.</p>
<p>Unlike traditional animal-based-gelatin desserts, Agar powder desserts stay firm outside of the refrigerator and set quickly during preparation. Agar powder also outperforms traditional gelatin to set acidic and alcoholic liquids.  Note also that comparatively, the two setting agents involved in traditional gelatin vs. Agar powder behave differently and need to be prepared in distinct ways when incorporating into a recipe. Agar powder needs to be boiled in order to set it, while traditional animal based gelatin can simply be dissolved in warm water. In short, that is because Agar has a higher melting temparature (it melts at 185 F), whereas traditional gelatin has a lower melting temperature (it melts at 95 F). Agar powder dishes will also set more quickly than traditional gelatin, and it doesn&#8217;t need any refrigeration.</p>
<p>Store Agar Powder in an airtight container in a cool, dry spot such as the pantry. It will last at least up to one year if stored properly.</p>

<p><strong>History of Agar:</strong></p>
<p>Agar may have been discovered in Japan in 1658 by Mino Tarōzaemon, an innkeeper in current Kyoto, who, according to legend, was said to have discarded surplus seaweed soup and noticed that it gelled later.<sup id="cite_ref-DifcoMan_7-0" class="reference"></sup><sup id="cite_ref-8" class="reference"></sup></p>
<p>Around the time of World War II, approximately 2,500 tons of agar were produced annually. <sup id="cite_ref-Loban_13-2" class="reference"></sup>By the mid-1970s, production worldwide had increased dramatically to approximately 10,000 tons each year. <sup id="cite_ref-Loban_13-3" class="reference"></sup>Since then, production of agar has fluctuated due to unstable and sometimes over-utilized seaweed populations.<sup id="cite_ref-14" class="reference"></sup></p>
