“Somalian Inspired” Quinoa, Mung Bean & Vegetable Dish
“Somalian Inspired” Quinoa, Mung Bean and Vegetable Dish
4 Tbs Saica extra virgin olive oil
2 cups cooked Quinoa (I like to mix the red and white)
1 cup cooked Mung Beans
1 sm. onion; chopped
2 – 4 chopped tomatoes (or canned)
1 tsp. minced garlic
1 sm. head of cabbage, chopped
1 Tbs lime juice and the zest
1 Tbs Spriana Lime Salt and additional for garnish
1/4 tsp. pepper and additional for garnish
1 tsp. sugar or local honey
1/4 cup chopped cilantro plus additional for quinoa and garnish
Directions:
1. Heat oil in a medium pot.
2. Add onion and cook until translucent.
3. Add the tomatoes and garlic; simmer for 5 minutes.
4. Add the cabbage and cover.
5. Simmer until the cabbage is soft; approx.10 minutes.
6. Add lime juice, pepper,sugar, and cilantro; cook for 1 minute.
7. Combine quinoa, mung beans, olive oil, chopped cilantro, lime zest, and lime sea salt to taste.
Arrange on platter and place vegetables on top. Season with additional salt and pepper. Garnish with cilantro.
