Twist on Deviled Eggs


Last week I wrote about cooking that perfect hard cooked/boiled egg. With Easter fast approaching, I know many people start to wonder about what to do with all those colored eggs. Growing up in a family with 3 other siblings we always had a large abundance of them. Lets face it, basic egg salad or deviled eggs doesn’t really sound all that exciting….so I’ve decided to do some surfing and find some unique twists!

This week I decided to find some Deviled Egg Recipes, and these 3 were my top picks. Mind you, you can add, substitute, change anything you want… be creative!

Fried Deviled Eggs

Ingredients

12 large eggs hard cooked eggs

1 cup mayonnaise

1/3 cup Dijon mustard

1 Tablespoon paprika

1/2 Tablespoon cayenne

1-1/2 Tablespoons curry powder

Juice of 2 lemons

Kosher salt

Ground Black pepper

2 eggs lightly whipped

1 cup corn starch

2 cups panko bread crumbs

Crumbled, cooked bacon or other garnish (optional)

Preparation

Peel and slice eggs from top to bottom in half. Remove yolk and place whites to the side. Mash yolks, add the mayo, mustard, paprika, cayenne and curry powder and blend well till smooth. Season with salt, pepper and lemon juice to taste. Place filling into pastry bag using a small hole tip.

First dip cooked egg whites in the corn starch and shake off any excess, then coat in whipped eggs. Next roll it in the panko bread crumbs, coating it well.

Fry until the panko is golden brown. Place the cooked egg whites on a plate and fill with yolk filling. Garnish with crumbled, cooked bacon, or other garnish if desired.

No Yolk Deviled Eggs

Ingredients

6 hard cooked eggs
1 medium potato, peeled and diced
1 tablespoon sweet pickle relish
1 teaspoon sugar
1 tablespoon mayonnaise
1 teaspoon prepared yellow mustard, or to taste
1 pinch paprika, for garnish

Place the potato in a saucepan with enough water to cover. Bring to a boil, and cook until tender. Drain.

Peel the 6 hard cooked eggs and cut in half lengthwise, removing the yolks; reserve for other uses or discard.

Place the potatoes in a medium bowl. Mash until smooth, then mix in the relish, sugar, mayonnaise and mustard. Spoon into the egg whites, and dust with paprika. Refrigerate or serve.

(what I would suggest is to add either some powdered horseradish or wasabi to the filling mix, wake up the taste buds some)

Cute Egg Chicks

Here’s something fun to do, how much would the kids enjoy creating and eating these adorable chicks!

Ingredients

12 hard-cooked eggs
1/2 cup mayonnaise
1/2 cup shredded Parmesan cheese
2 teaspoons finely chopped onion
1/2 teaspoon curry powder
1/2 teaspoon prepared mustard
1/8 teaspoon pepper
3 stuffed olives
1 small sweet red pepper

Directions

1. Cut a thin slice from the bottom of each egg so it sits flat. Cut a zigzag pattern a third down from the top of each egg. Carefully remove yolks and place in a small bowl; mash with a fork. Add the mayonnaise, Parmesan cheese, onion, curry, mustard and pepper; stir until well blended. Spoon yolk mixture into the egg white bottoms; replace tops.
2. Cut olives into slices for eyes. Cut 12 small triangles from red pepper for beaks. Gently press the eyes and beaks into egg yolk filling. Refrigerate until serving.
